- Mixing and dough preparation. Combining butter, flour and sugar to a uniform dough, protecting the structure by avoiding overdevelopment.
- Forming and cutting. Shaping with rotary moulders, wire cutters or sheet-and-stamp systems, matching the method to rounds, fingers or novelty formats.
