- Depositing and baking. Batter is portioned into trays or continuous pans, then baked in tunnel or rack ovens to balance crust and centre set.
- Cooling and handling. Products are cooled briefly, then de-panned and trimmed if required.
- Cutting and finishing. Ultrasonic or guillotine systems portion brownies cleanly, with optional toppings, glazing, or enrobing.
- Stabilisation and pack-off. Chilled setting or controlled cold chain secures shelf life before inspection and wrapping.
